Whole Grain Sourdough Discard Bread

So if you choose to click and buy, thank you. It means a lot to us. This bread is an excellent way to use up discard, while creating a delicious and healthy everyday bread. While it is whole grain, the addition of almond flour helps keep it soft, locking in moisture. It makes a great sandwich bread, and also makes amazing toast. It’s a perfect bread for using up discard when you forgot a feeding too. I’m not the only one that does that right? Right? If you cannot find white whole wheat flour, you can easily sub regular old whole wheat flour. I just like the final look when using some white whole wheat flour. In the end though, both are whole wheat and either can be exchanged for the other without changing the final outcome of the bread. If you do not have a lame to split the top, you can use a serrated knife...

Quick and Easy Teriyaki Seitan

So if you choose to click and buy, thank you. It means a lot to us. I have tried so many (so, so many) seitan recipes in an attempt to create a meat-like product the bearded man won’t turn his nose up at. This one is a hit every single time, and unlike other recipes, comes together quickly without hours of simmering or baking. I like to serve it alongside stir fry and sticky rice or yakisoba, making an entirely vegan meal that tastes just like I picked up the real thing from Golden China down the road. It’s quicker, healthier, and much easier on our bank account though! The other great thing about this seitan recipe is that it’s easy to use for other types of meals. Just don’t toss it in the teriyaki sauce at the end. It can be added to pastas (chicken broccoli alfredo, yes please!), breaded and deep fried to...

Multi-Grain Crusty Artisan Bread

So if you choose to click and buy, thank you. It means a lot to us. I love this recipe because it comes together very quickly with very little work on my part, but tastes as though it has taken hours or effort. The combination of the different grains gives it a beautifully chewy texture and rich, robust taste. There’s no kneading involved so after mixing your ingredients, you’re free to move on to your next activity until it rises and needs to be shaped. My kids especially love this bread when I make a pot of soup. It’s a great dunking bread! It also makes truly delicious toast, with a very nice texture when toasted up. Try it with a tofu scramble and some avocado on top for a delicious breakfast! I bake this bread in my clay dutch oven that is made specifically for bread baking. I love this dutch oven becaus...

3 Reasons We Chose Plant Based Homesteading

The homesteading world immediately draws up images of fluffy lambs, milking cows or goats, and producing your own meat. Perhaps you even think of hunting for your own food. Instagram is definitely full of photos of just that, and producing one’s own meat seems to be some sort of homesteading end goal. Why then, have we chosen to grow a completely plant based homestead? We have several reasons, and in this post I want to break down the top three. If homesteading is a dream you have, but seems too out of reach, let me assure you that a plant based homestead is not only easier by far than one trying to utilize livestock for food, it is less expensive, less work, and more ecologically sound. It can actually bring your dream of a self-sufficient homestead much closer, much faster. So, read on if this sounds up your ally, or if you’re simply curious why anyone would build this type of homestead. I do want to make note here that our farm does have animals on it, just not in the traditional wa...

Easy, Sugar-Free, Vegan Granola

So if you choose to click and buy, thank you. It means a lot to us. I think it is entirely possible that I am more in love with the smell of this granola baking than I even am with the taste of it. Maybe. It tastes pretty damn good too! In fact, I have a hard time allowing the granola the time it needs to cool, because my daughters like to sneak handfuls of it still warm, running off giggling and stuffing their mouths with the sweet concoction. This granola makes a great swap for traditional breakfast cereals, with lots fiber and complex carbs to keep you full and energized until lunchtime. We are fans of pairing a small bowl of granola with a smoothie for a quick and easy breakfast, but the bearded man and the kids also love to use this as a quick afternoon snack. Making your own gran...

Oil-Free, Vegan Black Bean Hummus

This post may contain affiliate links. I make a small profit if you click the link and make a purchase, which in turn helps support my family and the life we are working to build. So if you choose to click and buy, thank you. It means a lot to us. One of the things I missed when we first went fully plant based was a good bean dip. This black bean hummus really hits that spot, and since it has no oil, it's an incredibly healthy option for getting a lot of protein into your plant-based diet. Even if you aren't plant based, you'll enjoy this delicious hummus. It's smoky and creamy and absolutely delicious. My kids especially like to have what they call "snack lunches" which feature cut up veggies, crackers and/or chips, and a dip. By far, this black bean hummus is the dip they ask for the most often. We've even made it for Halloween parties and dressed it up with a coconut yogurt spiderweb on the top! It's delicious with veggies,...
