I've been making plant-based milk myself for several years now. This simple recipe creates the creamiest milk, and totally satisfies every vegan milk need. I've used it on cereal, mixed with chocolate syrup to make the kids chocolate milk, in baking, in my coffee, as the base for cream sauces... It's delicious and creamy and absolutely perfect.
I think one of my favorite things about this recipe is that when you heat this milk up for a sauce, it will thicken up all on its own, just like real cream. Which makes it absolutely perfect for making alfredo sauce or a base for vegan mac and cheese. It will also help thicken up creamy soups, and creamy soups happen to be one of my favorite things to eat ever. Not a single store bough plant milk has gotten thick for me like this one does.
Another bonus is that this plant milk is inexpensive. One of the things I hear most often as a reluctance to cutting out animal products is how expensive vegan products are, and they aren't wrong! A half gallon of cashew milk here can range from $4-6 at the grocery store. For large families, that cost adds up very quickly. This milk comes in at just $1.12 per half gallon which is a pretty good deal!
You will need a couple special items for making your milk, but the cost is not astronomical and will quickly be recouped with what you save in buying store bought plant milk.
Tools You Need
1. A nut bag. No, it isn't as dirty as it sounds. A nut bag has a very fine mesh to filter out the tiny particles, leaving you with a creamy plant that's smooth and delicious.
2. A container for your milk. These glass milk bottles are darling if you want to keep with a lovely aesthetic. I have several. More often than not though, I just use simple quart size mason jars. This recipe will fit neatly into two with a little extra to top off your coffee.
3. While it is not necessary, and can be a large expense, if you are going to move into making a lot of vegan food from scratch, I highly recommend a vitamix. I got a refurbished one for under $300 and it immediately became my very favorite kitchen tool. When you can afford to invest in one, I guarantee you won't be disappointed. You can use a regular blender to make this milk, you will just need to soak the cashews first, either in boiling water for two hours (simply pour boiling water over the cashews then allow to soak for two hours) or in cold water overnight.
Creamy Plant Milk
Ingredients
2/3 cup raw cashews
2/3 cups rolled oats
8 cups cold water
Instructions
Add all ingredients to your blender. If not using a vitamix, presoak your cashews according to the instructions above. Blend on high for one minute.
Pour mixture through a nut bag into a large bowl. Squeeze out the bag until all the liquid is squeezed out. The nut/oat leftovers can be added to bread, smoothies, or composted.
Pour your plant milk into containers you can seal and shake well before each use.
