Vegan Bulgogi with Garlic Green Beans and Broccoli

I have always loved bulgogi, since I was a little girl living in South Korea (air force dad). It became a staple in our home my entire life so when I stopped eating meat, bulgogi was the one thing I missed the most (that and my grandma's oven fried chicken). 



What is bulgogi? Essentially it's Korean bbq. My mother would slice beef extra thin, marinate for days, and then grill it. This version for goes the grill but you could stir in a tsp of liquid smoke to the sauce if you wanted to replicate that right off the grill taste. This version comes together super fast,giving you a full dinner in under thirty minutes and tastes like it came from a fancy restaurant. Even my meat eating mother in law said she couldn't tell it was vegan. Sweet!

I use soy curls for this recipe but it can also be made with tvp. I love the texture of soy curls and I love that they're barely processed. 

The green beans could be subbed with asparagus, cauliflower would work in place of the broccoli... The sauce is incredible and would pair nicely with a lot of different things, even as a stir fry sauce or on pan fried noodles. Feel free to experiment and let me know what you come up with!
