Amazing Whole Wheat Vegan Belgian Waffles

One day, many years ago, I made waffles and realized it was Wednesday. I jokingly told my kids it must be Waffle Wednesday! I am now contractually obligated to make waffles every single Wednesday morning because, after all, it is Waffle Wednesday. The moral of the story is that you should never, ever set up a precedent like that for children unless you are 1000% ready to deliver on it for the rest of your entire life.


Fortunately, these waffles are quick and simple to whip up and using whole wheat flour and flax meal makes them at least a *bit* healthier than the original version. Add some sliced strawberries or some blueberries and hey, now it's an entirely balanced meal. Basically.


These waffles are perfectly fluffy with a beautiful vanilla and butter scent and taste that makes the whole house smell like a breakfast diner. Add some vegan butter and real maple syrup on top and pair with some vegan sausage and scrambled tofu for a full vegan diner experience right at your own table.


Whole Wheat Vegan Belgian Waffles

Ingredients:

1/4 cup flax meal

1/2 cup water

3 cups plant based milk

2 Tbls apple cider vinegar

1 1/2 cups whole wheat flour

1 1/2 cups all purpose flour

2 Tbls baking powder

1 tsp salt

6 Tbls coconut sugar

10 Tbls vegan butter, melted

3 Tbls vanilla

Directions:

  • Mix flax meal and water in a separate bowl and let sit to gel up. Mix plant milk and apple cider vinegar together in a liquid measuring cup.
  • Meanwhile, mix together all dry ingredients in a large mixing bowl. Add the plant milk, flax meal and melted butter and vanilla and mix well.
  • Allow the batter to sit for 5-10 minutes to activate all the ingredients.
  • Pour half a cup of batter at a time into your greased, hot waffle iron and cook until golden brown.
  • Top with vegan butter, maple syrup, sliced fruit, peanut butter or dust with powdered sugar. Enjoy!
